Fake Crepes: Oops, I Messed Up Breakfast

Pioneer Woman has never failed me. So when my little brother asked me to make pancakes last Saturday morning, my first thought was to check my super-favorite cookbook for a pancake recipe:


Then I mixed up Edna Mae's Sour Cream Pancakes. I didn't have enough sour cream, so I subbed in plain fat-free yogurt to make up the difference. This always works well for me.


Then I griddled them up according to the directions. And I tried to serve these to my nine-year-old brother:


He promptly rejected them. I don't blame him. So I put them all in Tupperware to be used later. I HATE to throw any food away.
Notice how this post wasn't called Sour Cream Pancakes? It's because they weren't that good. Rather, I was convinced to salvage not-so-hot leftovers.

A couple days later, I got a couple of these flat, eggy-tasting pancakes out of the fridge and decided to convince my brain they were crepes. I covered them in fresh broccoli.


And some blue cheese I'd been wanting to find a purpose for.


Threw that culinary non-masterpiece into the microwave for a bit.


And it came out surprisingly passable. I ate it for dinner and didn't feel like I was choking it down.


No recipe goes here. Rather, I issue a challenge to throw away as little food as possible. As long as it's not horribly burned or really screwed up, think of ways to repurpose leftovers into something more delicious!
