These are so delicious. I'd make them again, but I don't trust myself. I don't like Reese's, but I love the combination of peanut butter and chocolate in baked goods.
I adapted this: http://120dollarsfoodchallenge.com/2011/02/24/sweet-treats-peanut-butter-slice/. The original recipe is kind of detailed and formal. Anyone who's met me knows that I am not either of those.
So, mix all your dry ingredients in a bowl.
Melt the butter in the microwave.
Mix all the wet ingredients into the dry ingredients bowl.
Keep mixing until it all comes together.
The only reason I didn't binge on the batter is that there's raw egg in it. Even still, I considered. Press that into a greased 9x9 pan and bake at 350 degrees for about 20 minutes.
Mean while, melt the rest of the butter and some chocolate chips in the microwave. I used the same bowl as before.
When most of the chocolate is melted, mix it up until it's all smooth.
Then add the powdered sugar.
Look, done peanut butter bars! These are straight out of the oven.
This is me putting the chocolate on right away. I'm impatient. When I bake, I want to eat the goodies right away. Still warm. Oh yeah.
Lovely! This would be lovelier if you used a double boiler on the chocolate, but I wanted to keep this simple.
I took some out and ate it right away. I'm in love!
Peanut Butter Oat Bars
(makes 16)
1/2 cup whole wheat flour
1/2 cup all-purpose flour
3/4 tsp baking powder
1/4 tsp salt
1 cup oats
1/2 cup brown sugar
2 tbsp sunflower seeds
2 tbsp sesame seeds
1/2 cup natural peanut butter
1/4 cup honey
6 tbsp butter, melted
1 egg
Chocoalte Topping:
3/4 cup chocolate chips
4 tbsp butter
2 tbsp powdered sugar
1. Pre-heat oven to 350 degrees.
2. Mix dry ingredients.
3. Add wet ingredients.
4. Press into sprayed 9x9 baking dish.
5. Bake about 20 minutes
6. Melt and mix topping ingredients.
7. Spread topping over baked cookies.
These are good warm, room temperature or refrigerated. Try them each way if you can wait that long to eat them all!
