Cheesy Chicken, Broccoli, and Potato Skillet
This is a great recipe for working moms! It's quick, you only dirty one pan and it's pretty nutritious as well!
Ingredients:
3 large red potatoes sliced n' diced into quarters
1-2 cups diced chicken
Broccoli (to make this super speedy, I get a bag of frozen steam in the bag broccoli!)
1/4 cup shredded parmesan cheese
1 can broccoli and cheese soup
3/4 cup milk
1/4 cup heavy whipping cream
a dash of garlic powder
If you like to get a jumpstart on the potatoes, sometimes I microwave them first with a couple pats of butter to speed up the process!
Turn your deep pan or skillet on to a low-medium setting and bring the soup, milk, cream and potatoes to a boil. Reduce it a touch and let this simmer for about 15 minutes or until the potatoes feel soft. Add more milk is the sauce is getting too thick.
Toss in the steamed broccoli and the rest of the ingredients and just let them simmer and soak up the sauces for 5-10 minutes. Stir it up and serve!
You can always add more veggies and spices to make this more personalized. It is a great "build-from" recipe! Bon apetit!

This is probably me being dense, but is the chicken cooked first before you put in in with the broccoli and rest of the ingredients? My husband would love this.
Anita, I haven't made this myself, but I would cook the chicken first.
