Insalata Caprese

This dish makes a great appetizer, salad, or side and is especially fantastic during the hot summer months! It's VERY easy, best with fresh ingredients, and can be altered to be vegan friendly. (Although, I really don't understand why in the world one would EVER do that.)

Just grab your ingredients:

Fresh Basil Leaves
Diced Red Onion

Fresh Mozzarella Cheese

Balsalmic Reduction or Glaze
(This stuff is amazing and lasts forever! It is also great on steaks and chicken, or drizzled over fruit!)

All you have to do is slice up those tomatoes, lay some mozzarella on top, dice up that red onion and sprinkle it over the plate, place a basil leaf atop each tomato slice, then drizzle with your glaze. Sometimes I also grind some fresh black pepper over the top and sprinkle some shredded parmesan.

It almost looks too beautiful to eat!
