I can't believe I haven't posted this before! It's super-easy and one of my favorite high-protein dinners to make early in the week and reheat before practices.
Cut up some potatoes or sweet potatoes and cook in a little olive oil with taco seasoning until softened.
Get out some cheese. You could leave this out to be vegan, but I think it'd be missing something.
Canned black beans, canned diced tomatoes and wheat tortillas.
These potatoes aren't quite cooked enough and I'd eventually come to regret that a bit.
Dump in your other ingredients and cook until warmed through.
Put cheese in tortillas. I made these to eat later in the week.
Ta-da! Easy reheatable dinners!
Potato Burritos
(servings vary)
Potatoes, diced
Olive oil
Taco Seasoning
Canned black beans, drained
Canned diced tomatoes
Cheddar cheese
Wheat tortillas
1. Cook potatoes in oil over medium heat until softened. Coat with taco seasoning.
2. Add black beans and tomatoes. Cook until warmed through.
3. Arrange in tortillas with cheese.
