French Fries, Lightened Up


Did you know that French fries are vegan? Vegan doesn't necessarily mean healthy, but these fries are lightened up from a fast-food deep-fried staple.

Former Dead Girl Derby skater and Royal Pains bench coach Alice N Plunderland modified this recipe slightly from Prevention's Ultimate Quick and Healthy Cookbook. The original called for fresh herbs, but who keeps those on hand? I plan to make these soon myself and will probably swap out the regular salt for Lawry's seasoned salt.


Light French Fries
(serves 4 as a side)

1 lb russet potatoes
2 tsp Italian seasoning
1 1/2 teaspoons olive oil
1/4 tsp freshly ground pepper
1/8 tsp salt

1. Preheat oven to 450 degrees.
2. Spray cooking sheet with cooking spray.
3. Scrub potatoes and cut into 1/2-inch matchsticks.
4. Combine all the ingredients. Pour onto potatoes. Toss to coat.
5. Spread the potatoes evenly on sheet and bake for 20-25 minutes, stirring often.
6. Broil until browned to your liking if desired.
