The Most Amazing Bruschetta in the WORLD



 That title is not at all misleading, either. I promise. Hi, Edith Myfist here. Guest blogger and cheese lover. This is my first guest blog for Mel since becoming teammates, so it has to be awesome! Today I will teach you how to make the most delicious bruschetta you have ever had! The ingredients you will need are as follows!
  • 1 French baguette (preferably at least 3-4 inches wide)
  • Butter spread (I use Country Crock, but whatever you like best will work)
  • A couple garlic cloves
  • Whipped cream cheese
  • 3-4 Roma tomatoes
  • Diced red onion
  • 5-6 fresh basil leaves
  • Kalamata olives
  • Cheeses (Any variety of cheeses will work, really. I like one that spreads or crumbles like feta, and a couple that are shredded like Parmesan, mozzarella, cheddar, whatever your favorites are! For the recipe shown, I just used what I had on hand.)
First you will slice the baguette in half and set it open face on a pan while you preheat your oven to 375 degrees. Butter both sides evenly. Push the garlic through a garlic press or dice them up into fine bits and spread them over the butter. Next, spread the cream cheese on top of that! Then I used a caprichio de cabra (or soft goat cheese) and spread THAT over the top. Wait ... it gets better. I slice my tomatoes and place them on top of all that gooey goodness. Sprinkle it with diced red onion, diced fresh basil, place some kalamata olives liberally, and top all that with your shredded cheeses. I used Parmesan and New York sharp white cheddar.











Pop it in the oven for about ten minutes and BAM!!! Slice it up and serve it immediately! Just add wine and teammates for optimal enjoyment.
