The original plan was to make lazy pizzas from canned croissant dough. I didn't have any black olives—my favorite veggie pizza topping—and wasn't feeling any other route. Then I had a stroke of genius: there were a ton of strawberries in the fridge. The strawberries shouldn't be allowed to go bad. Put the strawberries on the pizza!
Then goat cheese fell into the mix. And some balsamic vinegar. I'd feel guiltier, but I fail to see how this is any less healthy than regular pizza. If you wanna know, I'm convinced this is more delicious.
Creamy, goat-cheesy strawberry goodness.
Dessert Hot Pockets
(makes 4)
1 can croissant dough
Fresh strawberries, sliced
Goat cheese, crumbled
Balsamic vinegar
1. Place half of the croissant dough triangles on a cookie sheet.
2. Cover croissant dough with strawberries and goat cheese. Drizzle with balsamic vinegar.
3. Top with remaining dough triangles.
4. Bake at 350 degrees until dough is cooked, but not browned.
Be creative! This concept would work with many fillings.
