Kale, Sweet Potatoes and Goat Cheese

I made this for dinner before skating yesterday. Now I want to make and eat this all the time. It was tasty and healthy, yet satisfying in a pizza-like way. It settled light, but kept me full all evening. A winner! And if you're counting calories, this comes in around 400 calories for a huge bowl.

So throw some chopped kale in a large skillet with some olive oil, salt and pepper.


Dice a sweet potato and get it boiling in a small pan.


Pull out some goat cheese. You could leave this out to make it vegan or if you don't like goat cheese, but I think it pulls this together.


When the kale is softened and starting to crisp on the edges, the sweet potatoes should be fork-tender. When both ingredients are at this stage, drain the sweet potatoes and combine them in the pan. Add a little extra salt and pepper, and cook a couple minutes to dry out the potatoes a bit.


Smash 2 oz of cheese in a bowl.


Throw the warm goodness in the bowl on top of the cheese.
