I modified an AllRecipes vegetarian stuffed pepper recipe for dinner last night. These got thrown into one little yellow pepper and cooked in a bread pan with a little bit of water in the bottom at about 275 until the pepper softened.
I made my stuffing out of leftovers:
Parmesan (grated, not powdered)
I really don't like green peppers, but yellow and red ones are okay. This was a delightful and filling dinner!
