
Let this be a warning kids, nightblogging can be a beautiful, beautiful thing.

I started with an ordinary omelette base of two eggs and some shredded cheese. Then I stirred in some basil-from-a-jar, some jarlic (garlic-from-a-jar, for the uninitiated), and some finely cut up roasted red peppers (you guessed it—from a jar).

During the last minute or so that the eggs were cooking, I dropped a slice of pita bread in the toaster and nuked some tomato sauce in the microwave for 30 seconds.

Then I began to assemble my creation.


I added parmesan cheese (the real stuff, not the powder) and some turkey pepperonis.

Behold my new favorite food.

I wasn't sure how this would turn out. I'd never tried putting basil or garlic in scrambled eggs before but it ended up being ridiculously delicious. Everything worked incredibly well together. I wish I'd had some mushrooms to top it off with, but it was wonderful even without them.
So, did I just invent the Pizza Omelette?

Pita Bread
Two Eggs

This is a great idea! I'll replace the turkey pepperoni with vegan pepperoni and give it a shot! Writing the ingredients now for my next grocery shopping expedition. Thanks!
